I came across this recipe on Real Simple and finally got around to trying it out this weekend - it was SO GOOD! Good enough for me to want to try it out on my meat eating pals (TBD). Try it - you'll like it! And it was really easy - definitely recommended for anyone trying to cut back/give up meat, or just eating healthy.
VEGETARIAN TACOS WITH CORN, SPINACH & GOAT CHEESE

INGREDIENTS
1 tbsp olive oil
1 14 oz package tofu, extra firm - drained, patted dry, and crumbled
(to drain tofu, slice it in half, put it on a sheet pan with paper towels on the bottom, put another paper towel on top, then weigh it down with another sheet pan with soup cans or something heavy on top to squeeze out the extra water, for about 30 min)
1 1/2 tsp chili powder
kosher salt and black pepper
1 10 oz package frozen corn, thawed (I used canned corn that I had, worked fine)
5 oz package baby spinach (about 6 cups loosely packed)
8 small flour tortillas
3/4 cup crumbled goat cheese (3 oz)
3/4 cup salsa
DIRECTIONS
1) Heat the oil in a large nonstick skillet over medium high heat. Add the tofu, chili powder, 1/2 tsp salt and 1/4 tsp pepper. Cook, tossing occasionally, until golden brown, 4-5 minutes.
2)Add the corn and cook, tossing, until heated through - about 2 minutes. Add the spinach in batches, and 1/2 tsp salt and pepper until wilted.
3) Fill the tortillas with goat cheese, salsa, and tofu mixture. EAT UP!

these look so good! my boyfriend and I eat meat, but hardly any, I feel much healthier when I only eat it a couple of times a week. I've never made tofu though, always quorn. It's been kind of a meaty week, so I think I might make these tomorrow
